Keto Lasagna

Keto Lasagna

Lasagna is a classic Italian dish usually loaded with carbs from the noodles, the sauce, and the cheese. But you can make a keto lasagna with real noodles, a meaty sauce, and a cheesy layer without the carbs. How? Keto Lasagna is made with mozzarella cheese, eggs, and lupin flour, a low-carb, high-protein flour made from lupin beans. These keto lasagna have a texture very similar to the real thing, and they hold up well in the lasagna. Here’s the recipe for keto lasagna :

  • Mix 2 cups of shredded mozzarella cheese, 4 egg yolks, 1/4 cup of lupin flour, and a pinch of salt in a microwave-safe bowl to make the noodles. Microwave for 2 minutes, stirring halfway, until melted and smooth.
  • Spread the dough between two sheets of parchment paper and roll it into a thin rectangle. Cut into 4 equal pieces, and prick them with a fork. Bake in a preheated oven at 375°F (190°C) for 15 minutes, until firm and golden. Let them cool slightly, then peel off the parchment paper.
  • To make the sauce, cook 1 pound of ground beef in a large skillet over medium-high heat, breaking it up with a spatula, until browned and cooked. Drain the excess fat, and season with salt, pepper, garlic powder, onion powder, and cayenne pepper. Stir in 1 cup of sugar-free marinara sauce, and simmer for 10 minutes, until slightly thickened.
  • To make the cheese layer, mix 1 cup of ricotta cheese, 1/4 cup of grated parmesan cheese, 1 egg, and some parsley in a small bowl.
  • To assemble the lasagna, spread half of the meat sauce over the bottom of a 9×13-inch baking dish. Top with one keto noodle, half of the cheese mixture, and half of the shredded mozzarella cheese. Repeat with another layer of meat sauce, noodles, cheese mixture, and mozzarella cheese.
  • Bake in the oven for 25 minutes, until bubbly and golden. Let the keto lasagna rest for 10 minutes before slicing and serving.
